Strawberry Rhubarb Apple Sauce
Authors: Angie Murphy and Brent Lazenby
Ingredients:
6-8 Red Apples, chopped
2 Cups Rhubarb, chopped
1 Cup Ripe Strawberries
¼ Cup Melted Butter
½ Cup Apple Cider
Optional: ¼ Cup honey
Directions:
1. Melt butter in a large soup pot. Stir in chopped apples and cook on medium heat for about three minutes. Stir in rhubarb, strawberries, and cider. Cook until the fruits begin to break down and lose their shapes. Turn heat to low and continue to cook for about half an hour.
2. Puree the sauce using a hand blender, or allow to cool slightly and puree in a standard blender.
3. For a sweet snack or dessert stir in the honey to taste. Serve warm or cold.
