Roasted Sweet Potatoes and Yogurt

Ingredients:
3 Sweet Potatoes
3 Tbsp Sunflower Oil
2 Garlic Scapes
1 Cup Yogurt
1 Green Onion
Rosemary
Salt

Directions:
1. Pre-heat oven to 375F.
2. Wash sweet potatoes and cut into 1 inch chunks. Spread across cookie sheet and coat with oil. Cut garlic scapes and sprinkle over the potatoes. Cut up rosemary and sprinkle over potatoes. Cook at 375F for 35 minutes or until cooked through and lightly toasted. Cut up green onion and sprinkle over the potatoes. Add salt to taste. Serve and use yogurt for dipping.
