Meatballs and Rhubarb Sauce

Yield: Approx. 30 Meatballs

Ingredients:

Meatballs:
2 Lbs Lean Ground Beef
1 Yellow Onion
2 Cloves Garlic

Sauce:
Rhubarb, washed and chopped into bite sized pieces
Sweet Apple Cider

Directions:
1. Finely chop onion and garlic. Mix into ground beef. Form into balls and place on rib rack or some other tray with a raised rack. There will be quite a bit of drippings.
2. Bake in 350 degree oven for 30 minutes.
3. Meanwhile, bring the rhubarb and apple cider to a boil. Watch the rhubarb, when it starts to break apart it is cooked. Does not take long.
