100-Mile Cheese Crackers

Ingredients:
1 Cup Whole Wheat Flour (more as needed for rolling)
½ Tsp Salt
½ Cup Local Parmesan Cheese, finely grated (if not available, try other local hard cheeses – I used 4-year Old White Cheddar)
4 Tbsp Unsalted Butter
¼ Cup Cream, more as needed (I used milk)
Optional Coarse Salt, Chopped Herbs (whatever you would like to sprinkle on top)
Directions:
1. Preheat oven to 400 degrees F.
2. Lightly dust a baking sheet with flour (or use parchment paper).
3. Combine flour, salt, cheese and butter in a food processor or immersion blender. Pulse until ingredients are fully combined.
4. Add the cream and continue to blend until mixture holds together, but isn’t sticky. Add more cream, a teaspoon at a time, if necessary.
5. On a lightly floured surface, roll out dough to ½ inch thickness (or thinner if desired). Transfer dough to baking sheet and lightly score with knife (or pizza cutter) so that you can break it later.
6. Sprinkle with optional toppings, if desired.
7. Bake for 10 minutes, or until lightly browned. Cool and serve.
