Arugula Potato Salad

Ingredients:
Salad:
8-10 medium Potatoes
¼ Pound Arugula
Handful Garlic Scapes, chopped
1 Cup Romano Beans
Sauteed Mushrooms
½ Tsp Salt
2 Tbsp Fresh Dill
Dressing:
1/3 Cup Sunflower Oil
1/4 Cup Apple Cider Vinegar
2 Tbsp Maple Syrup
Directions:
1. Combine all ingredients.
